Finely dice one medium onion, one large carrot and 3 stalks celery.
Heat 1 Tablespoon olive oil or butter or butter substitute in a large stock pot or creuset over medium heat.
Add chopped vegetables and sauté until onions are translucent and veggies are desired tenderness.
Add 8 oz spaghetti noodles that have been broken into 1 1/2 inch lengths. (Tinkyada is a great GF option)
Add 8 cups water and 2 Tablespoons Traci's Vegan Chicken Bouillon.
Turn heat to high, bring to a boil, then reduce heat and simmer for 18-20 minutes or until noodles are desired tenderness.
Taste and add additional salt if desired. Garnish with fresh parsley. Enjoy!
